
Hot Honey Ground Beef Bowl
Sweet, spicy, and packed with protein—this bowl is quick to make and full of flavor. Perfect for busy nights or meal prep.
Ingredients (serves 4)
- 2 lbs Elkins Cattle Co. Ground Beef
- 4 medium sweet potatoes, washed and diced into small cubes
- 2 cups white rice
- 4 cups of bone broth
- 2 cups cottage cheese
- 2 avocados, sliced
- Hummus
- Pumpkin seeds
- Olive oil
- salt & pepper
- minced garlic
- Hot honey (for drizzling)
Directions
- Cook the Rice: In a pot, combine 2 cups rice and 4 cups bone broth (or water). Bring to a boil, then reduce heat to low, cover, and simmer for 15–20 minutes until tender and liquid is absorbed. Fluff with a fork.
- Roast Sweet Potatoes: Toss sweet potato cubes with olive oil, minced garlic, salt, and pepper. Spread evenly on a baking sheet and roast at 425°F for 30 minutes, flipping halfway. For extra caramelization, broil for the last 2–3 minutes until edges are golden.
- Cook the Beef: In a skillet over medium heat, cook ground beef until browned and fully cooked. Season with salt and pepper.
- Assemble Bowls: Divide cooked rice among bowls. Top with roasted sweet potatoes, ground beef, a scoop of cottage cheese, and a spoonful of hummus.
- Finish & Serve: Add sliced avocado, sprinkle pumpkin seeds, and drizzle with hot honey. Serve warm and enjoy!
