What's the story behind ECC Wagyu?

Wagyu has been part of our program for years — just not direct-to-consumer.

We originally raised Wagyu to serve our restaurant, hotel, and steakhouse partners who were looking for a higher-marbling, luxury eating experience raised with the same standards we apply to everything we do. Over time, our ECC family began asking for access to that same beef at home.

This Wagyu collection is our answer to those requests — offering a limited, carefully raised Wagyu program directly to our customers without compromising our values or transparency.

This Wagyu program is distinct from our 100% grass-finished Angus line and is offered transparently as its own collection, so customers can choose what aligns best with their preferences.

What is American Wagyu?

Our American Wagyu is an F1 cross (50/50) between Wagyu and our Angus+ cattle, intentionally bred to combine the best of both genetics.

Wagyu brings the exceptional marbling and tenderness it’s known for, while our Angus genetics contribute structure, balance, and a clean, beef-forward flavor. This deliberate cross allows us to create a premium eating experience that’s rich and indulgent, without losing the familiarity and integrity our customers expect from our beef.

How is our Wagyu graded?

American Wagyu is not officially graded using the Japanese A4/A5 system, which only applies to beef graded in Japan.

That said, our Wagyu has been repeatedly referred to as “A4-equivalent” by respected steakhouse butchers and chefs who work with Japanese Wagyu regularly. This reflects the level of marbling, texture, and eating quality they see in our beef — not a formal certification.

Rather than chase labels, we focus on producing beef that performs at the highest level on the plate, and we let experienced professionals judge it by how it eats.

Is your Wagyu Herd Grass Fed & Finished?

Our Wagyu is grass-fed for the majority of its life, then finished with a balanced blend of grass and grain, including oats, during the final months before harvest.

While 100% grass-fed and grass-finished Wagyu does exist, it’s extremely rare and typically does not develop the level of marbling Wagyu is known for. Wagyu genetics are capable of exceptional intramuscular fat, but grass alone usually doesn’t provide enough energy for those traits to fully express.

A short, intentional finishing phase allows tenderness, marbling, and flavor to develop naturally — delivering the rich, buttery eating experience most people expect from Wagyu.

We use a grass-forward, balanced approach that respects the animal, honors Wagyu heritage, and prioritizes both quality and integrity.

What are the differences between Angus & American Wagyu beef?

The difference is primarily genetics and marbling.

Both our Angus and Wagyu lines are raised with the same standards, values, and attention to detail, but Wagyu carries genetics that allow for higher intramuscular fat. To respect those genetics, our Wagyu is grass-fed for most of its life, then finished with a balanced blend of grass and grain, allowing marbling and tenderness to fully express.

This results in:

  • Greater tenderness
  • A richer, more buttery texture
  • A more indulgent eating experience

If our Angus is your everyday gold standard, Wagyu is the elevated, special-occasion expression of that same philosophy.

OUR ANGUS COLLECTION

Do we treat our beef with antibiotics or hormones?

No, our beef is not raised with antibiotics or hormones as part of standard practice. If an animal becomes ill and requires antibiotics, it is removed from our supply chain to ensure that only healthy, untreated animals are used in our products.

Is our beef dry-aged?

Yes, all of our beef is dry-aged for a minimum of 15 days by our incredible partners at a local, highly trusted family-owned processor.

Is our beef USDA inspected and graded?

Yes — all of our beef is USDA inspected and processed in a USDA-inspected Texas facility to meet federal food safety standards.

Our Angus beef consistently earns USDA Prime. Prime represents the highest USDA grade and reflects exceptional marbling and eating quality.

That said, we view grading as a confirmation, not the goal. Our focus is on how the animal is raised, finished, and cared for from start to finish. When those fundamentals are done right, the grade follows — and the eating experience speaks for itself.

Is our beef certified organic?

While we are producing a 100% all-natural product, we are not certified organic. We raise beef that we believe to be the very best quality and to us, knowing your farmer holds much more power than any certification these days. We consider our standards to be superior than organic since our livestock is raised outdoors.

ORDERS

Why can't you purchase fewer than 5 cuts?

Because we ship frozen beef directly from our farm, a 5-cut minimum helps ensure your order arrives frozen, protected, and in the best possible condition.

This minimum also allows us to:

  • Pack orders efficiently in insulated boxes
  • Keep shipping costs reasonable
  • Reduce waste and unnecessary packaging

It’s a balance between quality, food safety, and keeping farm-direct beef accessible without cutting corners.

When will my order ship?

Our family ships orders out every Monday. Order cut off date for same week delivery is Sunday at 10 am CT. Orders placed between Monday-Sunday at noon will ship out that following Monday.

Once shipped, your order will be at your front door within 1-2 business days.

Holidays and severe weather will affect shipping schedules.

Once your package hits the truck, you will receive a UPS tracking number(s) via email to track your order at any time.

Is it possible to place multiple orders going to different addresses?

Yes! For smaller quantities, feel free to place multiple orders online as usual. If you’re interested in sending bulk gift boxes—such as to a client or employee list—please reach out to us directly. We’re happy to create the individual orders on your behalf and provide a single master invoice for easy payment.

Do we take custom orders?

All the time! We love making the craziest bbq pitmaster or holiday dinner dreams come true. Contact us at info@elkinscattleco.com, and we'll see if we can fulfill your custom order off one of our upcoming harvests.

Do you need to be home to accept delivery?

No need to be home for delivery. A signature is not required; however, we do suggest unloading your beef into the freezer as soon as possible to ensure it stays frozen and fresh.

What is your beef is thawed upon delivery?

Your order is carefully packed with insulated liners and ample dry ice to ensure safe delivery. By design, the dry ice is often fully or nearly sublimated by the time your box arrives, so you don’t need to handle it.

Your beef is perfectly safe if it arrives fully frozen, partially frozen, or cold to the touch.

If your order arrives fully thawed and warm due to a shipping delay outside the expected delivery window, please contact us within 24 hours of delivery at orders@elkinscattleco.com and we will gladly make it right.

Once a package is marked as delivered, it is the customer’s responsibility to promptly retrieve and properly store their order. Orders that are left unattended or not brought inside in a timely manner are not eligible for replacement.

In rare cases of major carrier disruptions, severe weather, or other circumstances beyond our control, we will work with you to find a fair resolution, which may include a replacement, store credit, or partial refund at our discretion.

Can you pick up your order?

Yes! Our ranch is located in Lampasas, Texas, and we also regularly coordinate pickups in the Dallas and South Austin area where we have family.

Currently, pick ups at check out are based out of the Dallas area since that is where we are currently fulfilling and shipping orders.

All our beef is stored between our Lampasas ranch and our fulfillment center in Dallas. Please reach out if you have any questions on pick up. We will help get your order to the location that works best for you.

SHIPPING

Where do we ship to?

We ship anywhere within the contiguous United States. At this time, we cannot ship to Hawaii or Alaska.

When is the order deadline for same week delivery?

The order deadline for same week-delivery is Sunday at 10 am CT.

Orders placed between Monday-Sunday at noon will ship out that following Monday.

For example if you order a box on Monday evening, it will ship that following Monday/Tuesday!

How is our beef shipped?

Our meat is vacuum sealed, frozen, and shipped with plenty of dry ice in an insulated box liner.

Our quick transit time and careful packaging ensures your order arrives at your door frozen and fresh.


SHIPPING & PACKAGING INFO

OUR SHIPPING SCHEDULE

Our family ships out orders every Monday. For same week delivery be sure to place your order before Sunday at 10 am CT. Occasionally, we are able to get orders made after the cut off out the same week.

Orders placed after order cut off between Monday-Sunday, will ship out that very following Monday.

Tracking: You will receive an email with tracking once your box is scanned and gets on the first truck.

THE ELKINS CATTLE CO GUARANTEE

We take great care to ensure every order is packed safely and shipped properly. All orders are insulated, packed with dry ice, and shipped using UPS 1-2 delivery to protect product integrity.

In the rare event your beef arrives partially thawed but still cold, USDA guidelines state that it is safe to refrigerate or refreeze raw beef as long as it has remained at 40°F or below.

If your order arrives spoiled, lost, or fully thawed and warm due to a verified shipping delay outside the expected delivery window, please contact us within 24 hours of delivery and we will make it right.

Once a package is marked as delivered, it is the customer’s responsibility to promptly retrieve and properly store their order. Orders that are left unattended, delayed in retrieval, or improperly handled after delivery are not eligible for replacement.

In rare cases of major UPS disruptions, severe weather, or other circumstances beyond our control, we will work with you on a fair resolution. Resolutions may include a replacement, store credit, or partial refund at our discretion. UPS delays may not be our fault, but our customers' satisfaction is our primary commitment.
