Built From the Ground Up

In 2013, Tim Elkins bought an empty plot of land in Lampasas, Texas with no background in ranching or cattle. No inheritance. No playbook. Just a commitment to learn and a desire to build something meaningful for his family.

What followed was years of trial and error, early mornings, hard lessons, and a community willing to teach. Tim approached cattle with the curiosity of a student and the discipline of a craftsman. What began as a passion slowly became expertise — and that empty land became a working ranch built with intention from the ground up.

Excellence Earned & Shared

As Tim’s knowledge deepened, raising cattle became more than a skill — it became a science. Through intentional crossbreeding, relentless attention to detail, and an uncompromising standard, he developed some of Texas’s top-tier Angus and Wagyu genetics.

What started as beef raised for our own family quickly drew attention beyond our ranch. Awards followed. Top prices at auctions followed. And soon, chefs, pitmasters, and buyers who know great beef when they taste it sought out Elkins Cattle Co.

Today, our beef is served in leading steakhouses, five-star hotels, private country clubs, and award-winning wineries across the United States. This level of quality wasn’t planned — and it certainly wasn’t handed to us. It was earned through discipline, patience, and a deep respect for the craft.

We believe excellence should be shared. That’s why the same care, genetics, and standards we pursue for our own family are the ones we offer to yours.

For Us, It's More Than Just Beef

In November of 2020, our family experienced a loss that forever changed us. We lost our brother and son, Tyler, to a fentanyl-laced pill at just 17 years old.

In the midst of grief, this ranch became more than a business. It became a place for us to heal. A reason to stay close. An excuse to work side by side as a family when being together mattered most. We do this work in honor of Tyler — to steward our blessings well, to care deeply about what we put into our bodies, and to serve others with something real and life-giving.

They stepped away from corporate leadership to follow the Lord’s calling and build a life rooted in faith, family, and honest work. With no ranching background and everything to learn, they took a leap of faith that grew into a fully family-run cattle operation. Today, they raise real American beef with top-tier genetics for families who care about what they’re putting on the table—while teaching their three daughters the values of stewardship, entrepreneurship, and living with purpose.

Kaitlyn Olsker (Elkins)

As the middle daughter of the Elkins family, Kaitlyn took her own leap of faith in July 2024, leaving her banking career to help build and nurture the direct-to-consumer operations of Elkins Cattle Co.

From building this very website to handling customer service and packing your boxes every Monday, Kaitlyn has made it possible to get our beef from our ranch to your dinner tables across the country.

Ariana Yeagley (Elkins)

Ariana played a key role in building Elkins Cattle Co. from the ground up. She handled customer service, farmers markets, wholesale relationships, beef box packing, and the production and shipping of our tallow. Now newly married and living in Franklin, Tennessee, Ariana remains an important part of our family and the foundation of this business.
