Ingredients

  • 1 pkg Elkins Cattle Co. Summer Sausage, finely diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 box Zatarain’s Jambalaya Rice Mix (Dirty Rice works great too — maybe even better!)
  • 2 ½ cups water (per package directions)
  • 1 tbsp butter or olive oil

Instructions

  1. In a skillet over medium heat, add butter or oil.
  2. Toss in diced Summer Sausage and bell peppers. Sauté for 4–5 minutes until the peppers soften and sausage edges begin to crisp.
  3. Add the dry Zatarain’s mix and water. Stir well to combine.
  4. Cover and simmer per package directions (usually 25 minutes), stirring occasionally.
  5. Fluff with a fork and serve hot.
