
Summer Sausage & Rice

Ingredients
- 1 pkg Elkins Cattle Co. Summer Sausage, finely diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 box Zatarain’s Jambalaya Rice Mix (Dirty Rice works great too — maybe even better!)
- 2 ½ cups water (per package directions)
- 1 tbsp butter or olive oil
Instructions
- In a skillet over medium heat, add butter or oil.
- Toss in diced Summer Sausage and bell peppers. Sauté for 4–5 minutes until the peppers soften and sausage edges begin to crisp.
- Add the dry Zatarain’s mix and water. Stir well to combine.
- Cover and simmer per package directions (usually 25 minutes), stirring occasionally.
- Fluff with a fork and serve hot.
