Crispy Baked Beef Tacos + Chipotle Crema & Guac

Ingredients (Makes about 10-12 tacos)

  • 2 lb Elkins Cattle Co. Ground Beef
  • 1 packet taco seasoning 
  • 2 cups shredded cheese (Mexican Blend, Goat Cheddar, etc)
  • 15-20 white or yellow corn tortillas 
  • 6 cloves garlic, minced
  • 2 lime, juiced
  • 2, 4 oz can diced green chiles or green chili salsa
  • salt and pepper to taste
  • 1–2 tsp oil, for brushing tortillas
  • Optional: small splash of water (only if beef mixture feels too dry)

Instructions

  1. Preheat oven to 425°F. Lightly oil two sheet pans.
  2. Cook beef: In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
  3. Season: Return to burner and add in taco seasoning, garlic, water, lime juice, diced green chiles, salt and pepper to taste.
  4. Warm tortillas: Microwave tortillas (wrapped in a damp/wet paper towel) 30–60 seconds until pliable. Flip halfway through to help prevent the tortillas from breaking when folded.
  5. Assemble tacos: Spoon about ¼ cup beef mixture onto half of each tortilla. Sprinkle with cheese if desired. Fold to close.
  6. Bake: Arrange on prepared sheet pans, seam-side down. Lightly brush tops with oil. Bake 15–20 minutes, until crisp and golden. While they bake, your can make your desired toppings! Extra recipes below!
  7. Serve: Plate tacos hot and serve with Chili Sour Cream Sauce, Guacamole, and your favorite toppings.

Elkins Cattle Co. – Chipotle Cream

Ingredients

  • 1-1 1/2 cup sour cream (or Mexican crema)
  • 4 chipotle peppers in adobo sauce
  • 2 tsp honey or sugar
  • 1 lime, juiced
  • 2 cloves garlic
  • Salt, to taste

Instructions

  1. Combine all ingredients in a blender or food processor.
  2. Blend until smooth and creamy.
  3. Chill until ready to serve. Drizzle over crispy tacos.

Ingredients

  • 2 ripe avocados
  • ¼ cup red onion, finely diced
  • 1 lime, juiced
  • 1 jalapeno
  • 2 tbsp cilantro, chopped
  • 1 clove garlic (or ½ tsp garlic salt)
  • Garlic salt, to taste
  • Salt & black pepper, to taste

Instructions

  1. Scoop avocado into a bowl and mash to desired texture.
  2. Stir in red onion, cilantro, lime juice, jalapeno, and garlic.
  3. Season with garlic salt, salt, and black pepper.
  4. Taste and adjust seasoning as needed. Serve immediately.
