Mediterranean Steak Bowl with Homemade Tzatziki

Our flat iron steak is tender (2nd to the filet), juicy, and packed with protein—making it the perfect centerpiece for these Mediterranean-inspired bowls. We use a bright, herby marinade to bring out the steak’s natural flavor, then pair it with fluffy white rice, creamy hummus, crisp arugula, tangy pickled onions, and homemade Greek yogurt tzatziki. It’s wholesome, fresh, and satisfying for lunch or dinner.


Ingredients

For the Steak & Marinade

  • 1 lb Elkins Cattle Co. Flat Iron Steak (You can use other steaks as well!)
  • ¼ cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp red wine vinegar
  • 2 cloves garlic, minced
  • ½ tsp fresh rosemary, chopped (or ¼ tsp dried)
  • ½ tsp fresh thyme, chopped (or ¼ tsp dried)
  • ½ tsp oregano (dried)
  • Salt & pepper to taste

For the Bowl

  • 2 cups cooked white rice
  • 1–2 cups fresh arugula
  • Hummus
  • Quick homemade pickled onions (recipe below)
  • Homemade Greek Yogurt tzatziki (recipe below)

Quick Pickled Onions

  • 1 red onion, thinly sliced
  • ½ cup white vinegar
  • ½ cup water
  • 2 tbsp sugar
  • 1 tsp salt

Instructions:

  1. Bring vinegar, water, sugar, and salt to a boil in a small saucepan.
  2. Pour hot mixture over sliced onions in a heatproof jar.
  3. Let sit at room temperature for at least 30 minutes (or refrigerate up to 2 weeks).

Homemade Protein Tzatziki

  • 1 cup whole milk Greek yogurt
  • ½ cucumber, finely diced (squeeze out excess water)
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill, chopped
  • Salt & pepper to taste

Instructions:

  1. Stir all ingredients together in a bowl.
  2. Refrigerate until ready to serve.

Steak Instructions

  1. Marinate the Steak – Combine olive oil, lemon juice, red wine vinegar, garlic, rosemary, thyme, oregano, salt, and pepper. Add steak, coat well, and marinate in the fridge for 2–12 hours.
  2. Cook the Steak – Remove from marinade, pat dry, and grill or pan-sear over medium-high heat for 4–5 minutes per side (for medium-rare). Rest for 5 minutes, then slice against the grain.
  3. Build the Bowls – Spoon white rice into the bowl, add a scoop of hummus, a handful of arugula, pickled onions, and sliced steak. Top with tzatziki and enjoy!
