Thick-cut, dry-aged, and loaded with rich beef flavor โ€” this king cut is made for the grill and built to impress.

Details

A porterhouse is cut from the back end of the short loin, where the tenderloin (filet) is at its largest and most developed. Thatโ€™s what gives this steak its signature lookโ€”featuring a full, thick filet on one side of the bone and a well-marbled strip on the other. As cuts move forward along the loin, the filet tapers down, which is why smaller versions are classified as T-bones.

Cooking Tips

Keep it simple and let the steak do the work. Bring your porterhouse to room temperature, season generously with salt, and cook over high heatโ€”grill or cast iron both work great. Sear each side to build a deep crust, then finish over indirect heat or in the oven until it reaches your preferred doneness. Because of the bone and two different muscles, aim for medium-rare and use a thermometer for accuracy. Let it rest for 5โ€“10 minutes before slicing to keep it juicy and tender.

Who are we?

Weโ€™re the Elkins family โ€” first-generation ranchers who traded the corporate grind for Texas pastures and a mission to raise better beef. What started as a way to feed our own family clean, trustworthy meat has grown into something bigger: helping others reclaim food freedom, one box at a time. Every order is packed with purposeโ€”by real people who care what youโ€™re feeding your family.

How do we ship your beef?

Every cut is vacuum-sealed, flash-frozen, and packed with dry ice in an insulated box to ensure it arrives fresh. Our packaging is designed for long-term freezer storage and easy organization. Just pop it in the freezer when it arrives and thaw when you're ready to cook.
