The Flat (Lean Cut):
The brisket flat is the more uniform, leaner half. It slices beautifully, making it ideal for traditional brisket plates, sandwiches, and clean, even portions. If you’re after that classic presentation and a slightly lighter bite, the flat is your cut.
The Point (Marbled Cut):
The brisket point is thicker, more marbled, and packed with flavor. This is where the richness lives. As it cooks, the fat renders down, creating tender, juicy meat that’s perfect for shredding, burnt ends, or anyone who wants a more indulgent brisket experience.

Cooking Tips
Cook brisket low and slow—this cut rewards patience. Season simply with salt and pepper (or your favorite rub), then cook at 225–250°F in a smoker, oven, or covered grill until tender. Plan for several hours, cooking until the internal temperature reaches around 195–205°F and the meat feels probe-tender. The point will cook a bit richer and more forgiving due to its higher fat content, while the flat benefits from careful temperature control to keep it from drying out. Always let it rest at least 30–60 minutes before slicing against the grain to lock in juices and maximize tenderness.

We use UPS for all deliveries. Our beef is shipped using either 1 or 2 day shipping to ensure it stays frozen.

How do we ship your beef?
Every cut is vacuum-sealed, flash-frozen, and packed with dry ice in an insulated box to ensure it arrives fresh. Our packaging is designed for long-term freezer storage and easy organization. Just pop it in the freezer when it arrives and thaw when you're ready to cook.
