
Flying Dutchman Burger
Inspired by In-N-Out’s famous Flying Dutchman, this bunless burger swaps bread for golden onion “buns” and layers in juicy Elkins Cattle Co. patties with aged parmesan. We paired our dinner with roasted sweet potatoes and broccoli for a hearty cast-iron dinner that brings the drive-thru classic back to the family table.
Ingredients
- 1 pack Elkins Cattle Co. burger patties (4 patties)
- 2 large white onions, sliced crosswise into thick rounds (keep the rings together to form “buns”)
- 3–4 tbsp Elkins Cattle Co. cooking tallow
- ½ cup aged parmesan shavings (or substitute any sliced cheese of choice)
- 3 medium sweet potatoes, peeled & cubed
- 3–4 cups broccoli florets
- Salt & black pepper, to taste

Optional - Roast the sweet potatoes
- Toss cubed sweet potatoes with 1–2 tbsp melted tallow, salt, and pepper.
- Spread evenly on a sheet pan and roast at 425°F for 25–30 minutes until tender and crisp on the edges.

Optional - Roast the broccoli
- On a separate sheet pan (or with the potatoes if space allows), toss broccoli florets with 1 tbsp tallow, salt, and pepper.
- Roast at 425°F for 15–20 minutes until lightly charred.

Prepare & caramelize the onions
- Slice onions crosswise into thick rounds, keeping the rings stacked together as best you can so they hold their “bun” shape.
- Heat a cast iron skillet over medium heat.
- Add a spoonful of tallow and cook the onion stacks 5-8 minutes per side until softened, golden, and slightly caramelized. Remove carefully with a spatula to keep the rings intact.

Cook the burger patties
- In the same cast iron skillet, add the 4 burger patties. Season with salt and pepper.
- Cook 3–4 minutes per side, or until desired doneness.

Assemble your burger
- For each burger, place one onion “bun” on the bottom, set a burger patty on top, add caramelized onions and parmesan (or sliced cheese), then cap with another onion “bun.”
- Serve with optional roasted potatoes and broccoli.
