
Protein-Packed Egg Casserole
A hearty, flavor-packed breakfast casserole featuring our seasoned ground beef. Perfect for meal prep or feeding the family on busy mornings.
Ingredients
- 1 lb Elkins Cattle Co. Ground Beef or Ancestral Blend
- Bag frozen hash browns (about 2½ cups total) - thawed
- 1 cup for bottom layer
- ¾ cup mixed into egg
- ¾ cup to top
- 18 large eggs
- ½–1 cup cottage cheese
- 1 medium onion, chopped
- 1–2 cups fresh spinach, diced
- Crumbled goat cheddar (or your favorite cheese) to taste in mix & on top
- 2–3 Tbsp Elkins Cattle Co. Rancher’s Original Seasoning
- Elkins Cattle Co Cooking Tallow or high-quality cooking oil
Instructions
- Preheat Oven: Set oven to 425°F.
- Prep the Pan: Oil or tallow a 9x13 casserole dish. Spread 1 cup thawed hash browns evenly in the bottom.
- Crisp the Base: Bake hash browns until lightly golden (broil 1–2 minutes at the end for extra crispness).
- Make the Egg Filling: While hash browns bake, chop onion and spinach. In a large bowl, whisk together eggs and cottage cheese. Stir in onions, spinach, ¾ cup hash browns, and ½ cup cheese.
- Cook the Beef: In a skillet, cook Elkins Cattle Co. Ground Beef with Rancher’s Original Seasoning. Let it cool slightly before stirring into the egg mixture to avoid scrambling.
- Assemble: Pour the egg-beef mixture over the crispy hash browns. Top with the remaining ¾ cup hash browns and remaining cheese.
- Bake: Return to the oven and bake at 425°F until eggs are fully set (about 30 minutes).
- Slice & Serve: Let cool for 5 minutes, then cut into 12 squares.

When reheating in the morning, wrap in a lightly dampened paper towel and microwave.
