- Cuts: Half cow shares follow our standard cut sheet (see below), but offer more flexibility than a quarter share. You’ll be able to customize cut types and sizes within the natural yield of a half cow, ensuring your selections fit the product while still tailoring it to your preferences. We’ll contact you directly to discuss your options.
- All-Inclusive Price: Beef, processing, dry-aging, packaging, and pickup — no hidden fees.
Delivery & Pickup
Our family will handle pick up from our processor and store your boxes at our Lampasas ranch until your coordinated pickup or delivery date. Beef shares are available for pick up from our ranch in Lampasas/Copperas Cove.
As for deliveries, we do our best to hand-deliver beef shares whenever possible. The easiest areas for us are Lampasas/Copperas Cove, South Austin, and Dallas, where we have family, but we do work with customers outside those areas as well.
If you’re beyond those said areas, reach out—we’re happy to coordinate meet-ups, meet you halfway, or help plan a route to get you your beef. There’s a good chance we can make it work.

Half and whole shares allow full customization (limited to your portion of the animal at harvest). This standard cut sheet is provided to give a general picture of what a typical harvest looks like using our default specifications.
Please note: There is only so much of each animal. Choosing additional roasts, stew meat, specialty cuts, patties, or organ-blend ground beef will reduce the amount of trim available for traditional ground beef, and your ground beef quantity will adjust accordingly.
Every animal is unique, and final yields will naturally vary. Quantities listed above are intended as a guideline and may differ based on carcass size and your custom selections.
