- Timing: Ready about 3–4 weeks post harvest day or sooner if we have the cuts already in stock.
- Cuts Included: Our standard whole cow cut sheet is provided below, but optional customization is available. Someone from the Radius or Elkins team with reach out and walk you through any changes you'd like to make.
- Payment: Pay in full today — we’ll schedule you for the soonest available harvest.
- Value: A whole cow offers around $9,000-$12,000 in value if purchased as individual cuts
- All-Inclusive Price: $6,250 total for beef, processing, dry-aging, & packaging — no hidden fees.
Radius Market Pick Up
When your beef is ready, we’ll deliver it to Radius Butcher & Grocery for easy pickup. We kindly ask that orders are picked up within 48 hours of delivery.
You can expect:
• 12-16 large butcher boxes
• Frozen, vacuum-sealed cuts
• Easy transport (good for up to ~2 hours in boxes)
We’ll notify you as soon as it’s ready so you can plan your pickup.
Shipping is not available for beef shares.

Half and whole shares allow full customization (limited to your portion of the animal at harvest). This standard cut sheet is provided to give a general picture of what a typical harvest looks like using our default specifications.
Please note: There is only so much of each animal. Choosing customizations like roasts, stew meat, burger patties, organ-blend ground beef, and more will reduce the amount of trim available for traditional ground beef, and your ground beef quantity will decline accordingly.
Every animal is unique, and final yields will naturally vary. Quantities listed above are intended as a guideline and may differ based on carcass size and your custom selections.
