The whole tenderloin is the most tender muscle on the animal and is prized for its fine grain, smooth texture, and refined beef flavor. Because this is not a standard cut for us, whole tenderloins are offered by custom request only and are available in limited quantities.
To secure a whole tenderloin, a commitment fee is required, with the final price determined per ounce based on the finished weight. Please contact us directly if you’re interested in placing a custom order.

Cooking Tips
Cooking Tips
Whole tenderloin performs best when cooked whole and finished medium-rare to medium. Roasting, grilling, or reverse searing are all excellent methods for even cooking and maximum tenderness.
Allow the tenderloin to rest before slicing, then carve into medallions and serve simply to highlight its natural flavor.

Who are we?
We’re the Elkins family — first-generation ranchers who traded the corporate grind for Texas pastures and a mission to raise better beef. What started as a way to feed our own family clean, trustworthy meat has grown into something bigger: helping others reclaim food freedom, one box at a time. Every order is packed with purpose—by real people who care what you’re feeding your family.
How do we ship your beef?
Every cut is vacuum-sealed, flash-frozen, and packed with dry ice in an insulated box to ensure it arrives fresh. Our packaging is designed for long-term freezer storage and easy organization. Just pop it in the freezer when it arrives and thaw when you're ready to cook.
If you want to learn more, check out our FAQ page or email us at info@elkinscattleco.com and you'll hear back from a family member directly.
