Where can I find the Standard Cut Sheets?

We’ve pre-crafted cut sheets based on what we like to stock in our own family freezer. You can view these on each product page for a helpful reference. Keep in mind, every animal is unique, so while our cut sheets give you a great idea of what to expect, they’re based on averages and may vary slightly.

Can I customize my cut sheet?

Quarter Cow: Follows our standard cut sheet.

Whole/Half Cows: Fully customizable upon request.

We’ll guide you through what’s realistic based on your share size (for example, a quarter cow can’t include a whole brisket or 30 ribeyes!).

How much freezer space do I need?

A good rule of thumb is 1 cubic foot of freezer space for every 35–40 lbs of packaged beef.

Whole Cow (400-500 lbs): Requires 15-20 cu. ft. of freezer space - best for a large chest freezer

Half Cow (200-250 lbs): Requires 7-9 cu. ft. of freezer space - typically a mid-size chest or upright freezer.

Quarter Cow (100-150 lbs): Requires 3.5-4.5 cu. ft. of freezer space. A standard home freezer can fit a quarter share if it's mostly empty, but a small chest freeer is more convenient.

We use a 25 cu. ft. Frigidaire freezer - delivered by Lowe's/Home Depot - for a Whole Cow (for extra space & organization).

How long does it take to receive my beef?

Once your order is placed, we immediately coordinate with our butcher to secure the earliest available harvest date. From that date, the process takes about 3–4 weeks to butcher, dry-age, freeze, and package your beef β€” giving you plenty of time to prepare at home.

Where do I pick up my beef?

Directly from Radius Butcher and Grocery. Just have your ECC order confirmation pulled up to confirm.

How is the beef packaged?

Each cut has been expertly butchered, vacuum-sealed, and labeled. It's all frozen and ready to go in large butcher boxes for your drive home.
